Ray’s question to Karen:
Q: What is the most intriguing recipe that you’ve recently discovered?
A: For sure it has to be khachapuri. King Arthur Flour recently featured it in their Legendary Bread series. The ones I made were delicious but slightly over baked. Since then I have learned a lot about this national dish from Georgia and am looking forward to making it again.
Karen’s Question to Ray:
Q: Do you have a favorite cook book?
A: I got my “cook book habit” from both my mother and my grandmother, meaning we have way too many of them! My wife and I have cook books we inherited from them both along with many from Lori’s mother and several of our own of course. I wouldn’t say I have one favorite – I enjoy browsing and trying recipes from them all.
Two more recent favorites are Lidia’s Italy in America and Lidia Cooks from the Heart of Italy by Lidia Bastianich – both are autographed copies that Lori bought for me. One other that I reach for quite often is Everyday Italian by Giada De Laurentiis. It has many good recipes including one for a white bean dip that we’ve all made many times. It also has great sentimental value for me – it was one of the gifts I gave my mother on her last Mother’s Day.
